Ah, I love my job. Especially when it involves sipping bubbly in the middle of the day. And lucky for me, this past Tuesday marked just such an occasion as I attended the unveiling of Circa, the Huis van Chevallerie's newest fizzy creation! It was a lazy day of kicking back and having sensational wines, delectable food (prepared by Mamma Cucina Italian Restaurant) and enjoying Christa's warm and unasuming hospitality that makes everyone around her feel special.

Here enters Circa! Unlike her older sister, Circa is made in the fun style Italians call Prosecco. The grapes came from a 1ha bush vine Pinotage vineyard on their farm Nuwedam in the Swartland. Early picking and gentle pressing ensured that the lovely 'Pinot Noir' character of the wine was preserved. Second fermentation commenced in the bottle and after only 2 months the bottles were disgorged. This resulted in a punchy fruit driven bubbly, with ample freshness and a fine mousse.

TASTING NOTES
The nose shows upfront aromas of crushed raspberries and fragrant strawberries that follows through on the palate with juicy white peaches also sharing the stage. It has a long, rounded finish with a lovely acidity and great balance. Circa is a gorgeous summer-sipper and all round celebratory fizz. Serve with grilled prawns, smoked salmon tartare or simply have on its own - friends optional!
